Harissa Paste

As the Food Network announced last night that Melissa d’Arabian was the winner of the Next Food Network show the audience, I was with had mixed feelings.  However, the one thing that was not mixed was the new found interest in Harissa Paste, due to the sandwich Jeffery Saad made on his pilot.  Well, my friends were lucky- because not only did I know what it was, I knew where you could get buy it!

cmb_2066_7600626At Chelsea Market Baskets we carry Harissa Paste from Bart Delicatessen-  This popular condiment from Northern Africa is very spicy with many layers of subtle flavors, which includes coriander, caraway, and garlic. The heat comes from Piri Piri pepper, which Bart’s directly harvests.  This flavor combination is spectacular on sandwiches, blended into olive oil for bread dip, added on top of grilled meats and fish or used in a marinade.

Each year when the Fancy Food Show comes to NYC, we like to do a preview open house for our customers.  Come by Saturday, June 27th between 1pm-4pm to meet, taste and save.  The store will be full of owners and suppliers offering free tastings and answering questions about their products.

Paul will be sampling his selection of olive oils and dried herbs. Paul travels every three weeks to his farm in Italy to run the operations.

We are all happy at the CMB store to have one of our favorite brands back in the store – Stokes! After a short absence their mayonnaise and other condiments made it back into the United States.  All the Stokes Mayonnaises are made with top quality ingredients which makes it taste like homemade mayonnaise.  Here at the store we love the Blush Tomato Mayonnaise on an Amy’s Bread Baguette- our neighbor in Chelsea Market.

Even though the warm weather has just hit us, grilling season at my house started about a month ago.  From now until September the kitchen is just a holder of ingredients and dinning ware.  The grill is where its at!   Variety is key in keeping my grill happy.  Cape Herb spices have defiantly helped me so far this season; because this salmon was so tasty; I thought I would share the recipe.

Grilled Sweet and Smoky Salmon

4 small salmon fillets
4 tablespoons of Holey Smoke Rub from Cape Herb
Olive Oilholeysmoke

Mango Salsa

1 mango- small dice
16 Cherry tomatoes quarters
1 bunch of green onions finely chopped
Mint leaves
Fleur De Sel With Smoked Jalapeños from Cape Herb
Juice of 1 lime

Pre Heat Grill.  Mix the oil and holey smoke together to form a paste and massage it into the salmon until they are coated.  Place on medium-high heat for 4 to 5 minutes on both sides.

Mango Salsa: Mix all ingredients together and serve with salmon.

The chocolate index, the cheese index… the shortbread index, forget about the lipstick index!   Relatively inexpensive things to make you feel better for a bit and give you a fix during trying times is where the lipstick index is from.  The term was coined by Leonard Lauder during the challenging times of the 2001.  “It is a recession and you need…” as I heard someone say recently at our register, is more satisfying than lipstick.  The times are tough now but in the business that we are in, although we feel the affects from the corporate giving angle, I think there is a good future in what specialty food can do to nurture, enrich and easily afford pleasure. At the same time, we can know better about what we eat, understand its provenance, feel better for it and consume it in a way that is thoughtful and does not become mindless, endless calories. And of course, as we like to say – live to eat rather than eat to live!

While traveling about in China recently hunting for baskets that we buy, it dawned on me, that food whether prepared carefully in large restaurants served family style to large communal groups or late at night on the street, grilled and at times exotic, is prepared fresh and with tremendous variety. It is enjoyed more consciously and socially, than a good bit of the American food that we know, and at times is responsible for unhealthy relationships that our culture has developed with food. In addition, food in the United States, in relation to our standard of living is inexpensive and at times compromised, without getting into the politics of it, spending a bit more on better food is good stimulus. Good food here, than becomes a very affordable luxury, and a little luxury can go along way.

Expense account living maybe off but maybe food that is not on expense accounts can be enjoyed for its intrinsic value, and thereby help to better connect with what we eat. To me there is something therapeutic about appreciating food from where it comes from, how is handled, prepared and consumed that touches our basic human needs yet gives pleasure to and better meaning to our existence. Or another words, a good piece of well made chocolate that has a bit of story behind it, can ease the tension of our times.

I like to think that visiting our Chelsea Market Baskets where we have an array of product that can be appreciated at varying price points, can put you in better touch with food that is made in an inspired way and even thanks to our “slightly past it’s best before date but still tastes good” corner, can be a great bargain. Our friend George Capsis, the publisher of West View is quick to find good deals here and likes the idea of sharing them with the “locals.” We ourselves particularly like the idea of nourishing and creating community around good food!

Hello Friends and Neighbors,

This is my first entry in our new blog, which we are excited to share with you for lots of reason.  One that is happening right now is that  we are having a fun sale at great prices at our store to get the place cleaned and ready for Easter.  We have containers – some old inventory and some newer at ridiculous prices along with inspired specialty foods at prices starting at half a buck!

Come by we have many tastes and some great stuff that the staff is eager to purchase and they do not get a coworker discount on the stuff!

Early next week we plan to be looking like spring and filled with Easter fun!
